
Finally, a challenge that didn't take me an hour to create. Why you ask? It's crab, cream cheese, puffy pastry, scallions, and hot pepper relish ... THINGS THAT I EAT ON A NORMAL BASIS! I have two jars of hot pepper relish in the fridge, scallions are easy, and the rest is history. Viola! Quick and easy recipe that easily replace crab for chicken or turkey.
Ingredients:
1/2 of an 8-ounce package cream cheese, softened
1 egg
1 tsp. Worcestershire sauce
1-2 tsp hot pepper relish
1/4 cup shredded Parmesan cheese
1 can (6 ounces) crab meat, drained and picked over
1-2 tbsp. chopped fresh scallions
1 pkg. (9.5 ounces) puff pastry, cut into quarters
1/4 tsp. paprika
Directions:
Heat the oven to 350°F.
Stir the cream cheese, egg, Worcestershire sauce and hot pepper relish in a medium bowl. Stir in the Parmesan cheese, crab meat and scallions.
Spoon the crab meat mixture into the pastry cups. Sprinkle with the paprika.
Fold over two edges to make an open pocket as shown.
Bake for 5-10 minutes or until the filling is hot and pastry is flaky and golden.
