Most of the outer pieces are made of flexible but reactive smart materials. In combat situations you can imagine him moving a lot like General Grievous in the Tartakovsky Clone Wars cartoons, coming in really fast from any direction and smashing weapons/faces into walls with his feet.
Shem's head is a holographic projection, hiding the fact that his nervous system is decentralized and the only real way to kill him is to reduce his entire body to shrapnel. Besides, it's hard to be authoritative and a role model without a relatable, commanding face.
You can see why Adam had a bit of fanboy crush on that manbird, though.

Yes. After dozens of iterations, it's doubtful even his original brain is still intact.

Of course he did. At some point he accepts he's more the ghost of a brave commander than a person, and continues to serve the Empire as needed.
However, it's interesting to note that all the people who signed up for the Black Helios mission have an unsatisfaction with / a deep need to escape the current universe for some reason. Wonder what's Shem's secret wish, hmmmmm.

The only way to kill him is reduced his body to shrapnel.. Does that mean if He was servered damage in battle
[like lose limb and such] Will he lose some part of himself [Like Memories and such] as well?

I don't think he's ever off-mission, coordinating the deployment of thousands of Imperial ships across the galaxy.
Before the incident where he lost his body, he's a very good pilot and would take a private plane to fly over his home planet, which has many islands and sleeping volcanoes. Back then he was also very religious and does a lot of charity work (inspiring orphans with storytelling, cooking for the homeless) in a major temple on that planet.

With an advanced body that is very modular, he needs very little full-system maintenance. Smart-material parts are repaired/replaced/fabricated as needed.
He's almost always on a ship, and draws power from the core. Off-ship/energy-grid he can operate for about a month.

The neural net (webbed throughout his body) that is "Shem" will shrink and try to maintain his general sense of Self as much as possible, down to a minimum where the net is no different than a simple AI with no fixed personality. If he is repaired, the net "expands" and fills in the lost details from previous shrinkage the same way we try to reconstruct our memory of things based on surviving tokens like photos, video, songs, smells.

He's just really loyal and a good soldier, among many reasons he is kept alive. (Notice he's strongly aligned with Lawful on the Law-Chaos axis.)

Like I said, even Shem wonders about this, but to him it's not a big deal as long as he can still serve.

Both of these have never happened since his 2nd life began, but he'd probably self-terminate well before he's turned/captured (which is quite difficult to do!).
