This was my lunch earlier with Robert. I marinated it a bit longer than I would have, but it came out very well.
Ingredients:
*Orange
*Lemon juice
*Chardonnay
*Herb mix (dried rosemary, dried parsley. dried minced onion or onion powder, salt equal parts)
I recommend at least marinating it for three hours. I marinated mine for a day, and it still tasted very lovely and absorbed the citrus flavor. Marinate for three hours. The fish photographed above was left to marinate for a day (mainly due to having prepped too much for dinner).
Slice the orange into 1/4" thick pieces. Place your fillets into a baking pan and pour your marinade into the pan. Do not cover your fish. Sprinkle seasoning on top of each fish. Place two slices per fillet of the orange on each fish. Sprinkle some seasoning on top of the oranges. Nom on the rest.
Bake on 375F for 15 - 20 minutes. I recommend 15 for two pieces, and 20 for four or more.

Tilapia is very tender, and if over cooked it will fall apart. It's very tasty, and smells just as good as it cooks. Another good recipe is combining salt, pepper, rosemary, olive oil, and lemon juice and broiling it for 15 minutes.
I've pan fried it with marinara sauce. You just need to make sure both sides are cooked. I recommend cooking one side, flipping it over, adding the sauce, and then nom.
