I read it that people were abandoning a proper understanding of medicine and how the body functions in favour of simple spells which they don't understand and can't use effectively because they lack the required fundamentals.

Much like how practically no-one understands how computers work, even though they depend on it.

That's how I read it, too. It's like the difference between someone who knows a little first aid and nurses/EMTs/doctors/medical scientists/etc. You'll find a lot of people who pick up a little first aid to help save someone if they needed to, but not many who go the extra step further to learn the ins and outs, the whys and hows, of the body and healing processes to take the process farther. The first aid helps and can save lives, but to heal on a deeper level takes a lot of effort and dedication that most people don't put forth.
