For Vrghr – WHEW – this is TOUGH! Wuffy loves so MANY foods! *grins* But, here goes...
1) Southern-Fried Catfish Plate. The whole fish, with fins and tail. Marinaded in buttermilk to pull out a bit of the muddy flavor and add some tangy zest. Then its breaded with a well-seasoned cornmeal batter and deep fried until the coating is crunchy-crisp and the fish moist and tender and flakey. Sided with some savory turnip greens with little lumps of turnip in them, cooked with ham or bacon, garlic, and a bit of vinegar to contrast the light flaky fish with earth, lemony, tangy green goodness. Finish it with a slab of cornbread with the cracklin′s still inside, to sop up that luscious ″pan liqueur″ from the greens. Wuff LOVES to crunch the fins and tail, like a crisp fishy cracker, and to nibble those fatty and Oh-So-Good fish cheeks. This was Vrghr′s ″go to″ lunch and supper at a local Southern Cooking restaurant here in CO Springs. But unfortunately, it closed when the owner retired about 6 years ago. *whimper*
2) BBQ Pork Ribs, either Kansas City or St. Louis style. Wuff loves his done ″right″, in a smoker, low and slow for hours. The meat must still have a bit of ′tooth′, to pull it from the bone, and be not fall-apart soft or, heaven forbid, mealy. But it has to remain juicy too, not dried and hard on the bone. If St.l Louis style, the sauce should be caramelized, almost to a ′candy′ but with a bit of vinegar to cut the sweetness, and if KC style, should be robust and tomato-y with lots of molasses sweetness and a depth of spices to make it complex. Fruit in the sauce(s) is acceptable too. Vrghr makes a pretty rockin′ version of his own, but ″The Smoking Pig″ in Santa Clara, CA, turns out some pretty righteous ribs too!
3) Prime Rib. Dry aged to concentrate the flavors. Heavily rubbed with garlic, pepper, and other seasonings, and slow roasted until the flavors permeate the meat and the ′bark′ is crisp, with plenty of marbled fat through the meat to bring flavor, but not too many big chunks you have to cut away and leave on the side of the plate. Served on a heated plate, just a bit toward the ″medium″ side of rare, with fresh creamy horseradish and a bit of Au Juice on the side. Of course, if you side it with a loaded baked potato, salt-baked, and some tender asparagus in light drizzle of Hollandaise sauce, Vrghr would be in heaven! Vrghr found a chop house in his travels, years ago, that served it just this way. But it has been years (decades) since wuffy was there, and wuff is still searching for one to match that experience!
4) Massaman Curry w/goat. Curry is a wuffy-fav in most any form, but Massaman, with its rather non-traditional spices, thick, sweet sauce, rich coconut cream, and layered, complex flavors pretty well tops the list of them for Vrghr. Wuff really can′t pick a single restaurant as his ultimate fav, because every one creates their own ′secret version′ and many of the subtle differences are SO good!
5) Gelato. Creamier, silkier, and denser than American ice cream, with strikingly strong flavors. Served a bit warmer than ice cream, it explodes like a rich flavor bomb in the mouth. And So. Many. Flavors! When gelato is made right, it′s very hard to pick a ″best″ because ″right″ really equals ″Amazingly Good″, but a local ″mom and pop″ shop called ″Rizuto′s″ certainly ranks high on wuff′s list!
Honorable Mention 6) A guilty pleasure, and one Vrghr really misses from time to time: Suzy-Qs!! Those tender Devils Food cake slabs with that amazing vanilla ′schmutz′ in the middle! Oh, ,so BAD for you! But they tasted SOOOO Good! Now gone from the shelves after Hostess closed and sold their operation, and the new owners picked up the Twinkies, but not the Suzy Qs. *whimper*
