Behold! the fruits of my insanity!
I got really bored recently, and then i got really hungry, meaning it's time to dust off an old meme, one i created no less. so here are the rules.
suppose we're having a massive potluck dinner, you have to list four dishes you'd bring, your reason for loving them, and why it's good potluck food. then you tag two people and they have to do the same!
So for my potluck food, i'm going to imagine that we're having it in the winter so I'mma keep mine savory and warm.
1: Tater tot casserole , Cream of mushroom soup, ground beef, tater tots and cheese, my mom has only made this once and it was great. it's definitely a Midwest food, terrible for you but it tastes really good, plus for a potluck everything is easier to carry around in a covered Pyrex dish.
2: Waldorf Salad: It's a really weird combination, all that fruit, celery and mayonnaise, so I'll use yogurt instead. put it together in a bowl, stir until bored, can be made in a large amount.
3: Pico De Gallo : i make a mean Pico, i use all the regular stuff, but i use rice wine vinegar, garlic pepper and minced garlic in mine, i also don't seed my jalapenos so there's more of a kick to it that most people have. it's super easy to make and it's really cheap. pair it with these gluten free chips i found and it's the best.
4:My meatloaf.: Everyones is different. , everyones tastes different and looks different, but i like mine the best. I won't give all the recipe away but one of the ingredients is ginger paste, you use the pan drippings on top, it requires red wine and most importantly.....you make it in the MICROWAVE! surprise! i might put the recipe on here if anyone asks me to. but i love my meatloaf.

"That Waldorf Salad recipe sounds weird and I like how you substitute mayonnaise for yogurt instead. Greek yogurt could do the trick. Anyways, here's my list.
1. Fettuccine Alfredo with Mushroom and Bacon: Creamy noodles with mushrooms and bacon; best when the weather is cold outside. Savoury, simple, and of course, best with bacon! Also one of my own signature dishes when it comes to guilty pleasures. Also a good dish I'd make for my American friends if they want to Netflix and chill.
2. Scrambled Eggs with Smoked Salmon, Sour Cream, Chives, and Salmon Roe: Another personal signature dish of mine made with elegance. Exotic, beautiful, savoury, and overall tasty. Scrambled eggs with a Danish touch to it which brings me back to the fact that I was indeed born and raised in Denmark with Vietnamese parents. Despite considering myself as Vietnamese, I never forget my Danish past.
3. Bún bò Huế: It is a simple Vietnamese soup with a lot of spices and flavor along with ingredients. A large pot of this would be readily available to just serve up in the bowls for a large party. Though it is true that I like phở (Vietnamese noodle soup), I like Bún bò Huế for more flavour and kick. Also good for the winter too.
4. Chả Giò: Vietnamese fried egg rolls. Crunchy, crispy, savoury, and overall a fun party snack! However, it can be extremely hot and steamy so cool down takes a while on that. Despite this being a vegetarian dish, it can be enjoyed by about anyone who loves them including those who like meat.

Tough question! So many things wuff enjoys at a pot luck! Hmm.... lets go with Asian-inspired goodies this time!
1) Vrghr's Asian-Inspired Pasta Salad w/5-Spice Chicken & Peanut Sauce. This is one of the first forays into kitchen experiments and Asian flavors that wuff could call a complete success! A sauce full of complex flavors, with a touch of heat and rich peanut base. Wuffy served this at a Further Confusion picnic several years ago, when Vrghr was visiting San Jose friends while the picnic happened. Folks there claimed they'd "pay good money for the recipe!" *LAUGHS* Unfortunately, wuff hasn't got a photo of the results, so hasn't posted the recipe here on FA yet. BUT- - - It WILL happen!
2) Tom Kha Gai soup. A great complement to the noodles, and Vrghr loves the combination of curry flavors, rich coconut milk, and tasty chicken. A really superb soup in Vrghr's mind, and one wuff needs to practice a bit more on and create his own personal variation for posting here.
3) Shrimp Toasts. What's not to love? A thick coating of delicious shrimp paste, deep fried onto crispy crunchy toast points! YUM! And a nice crisp textural component to pair against the soup and thick, tasty noodles.
4) Almond Flan w/Mango sauce. More of a Asian Fusion idea than Asian traditional. Almond and mango flavors are used in many dishes, and Vrghr loves the rich, creamy, dense pudding of a Flan. So why not see if wuff can bring it all together? And alternative would be a sweet sesame caramel sauce instead of the mango. Creating this one should be a lot of fun!
