I think one of the problems is that all these lessons don't feel all that important. What is important is Nahmat's incredible power, coupled with the fact that she's always right when it matters. Yes she was wrong about some things, but those were fixed pretty easily, and/or she came to every important conclusion herself anyway.
She didn't need Shining Armor or Cadance do be understanding with her. She'd already deduced everything about how she interacted with Fluttershy; the ponies were just a method to get this development around to the readers. It wasn't that the ponies taught her anything, like she did with them, it was that she simply learned and then talked with them about what she'd learned on her own. That's why her character development feels like it comes out of the blue, it's like it happens whenever we're not looking. Even the ponies are surprised all the time.
It's the same thing here. Nahmat is right about Gralo possessing the Griffon, she came to the conclusion on her own when nobody, nobody else did. The only thing I can see where she's wrong that has major consequences is with Celestia. However, "I was wrong about how much you suck" does nothing to diminish Nahmat's greatness.
