
The Potato Bacon Mixture above is firm, cold, and very dry, when compared to normal Mashed Potatoes. That is because we will be turning them into small Cylinders. You can make patties if you want an easier shape, but Cylinders look so elegant, that I always make Croquettes like this.
Before you add the Bacon you've cooked, be sure to pat the bacon bits with a paper towel one more time to really soak up the excess grease. Too much oil in the mixture and it'll begin to fall apart.
Do the same for your chopped Scallions. Extra water will make the mixture fall apart as well.
