Recipe: Vampire Repellent! (garlic aioli)! :3
I was never a fan of mayonnaise, until recently I went to a local tapas bar with

gshepherd and a couple of other locals! There I discovered that real mayonaise doesn't taste anything like the stuff you get in a jar, and that with a little (or a lot) of garlic, it can become one of the tastiest condiments in the world.
Here's my recipe for a delicious homemade garlic aioli. You can whip it up in 5-10 minutes before any meal, and it should feed a table of 4-6 perfectly no matter how eagerly they like to dip their fries. :3
Recipe:
3 garlic cloves
1 egg yolk
125ml neutral tasting oil (I used rapeseed oil)
pinch salt
lemon juice
pepper
Mince the garlic cloves and whisk together with the egg yolk till creamy. Add your pinch of salt.
Whisk in the oil a little at a time until smooth and thick. Once all your oil has been emulsified, add some lemon juice to loosen up the mixture to a glossy, rich consistency. A tablespoon should be about right, but you can add more if you want it a little more loose.
Add pepper and perhaps a tiny bit more lemon juice to taste, and enjoy garlic breath until the next time you brush your teeth!

Truffle is an incredibly strong flavour, so use it sparingly. A few drops of truffle oil would certainly add a kick to the oil, and if you're lucky enough to have the actual product? A few grams ground up and sprinkled/mixed in at the last minute would add that amazing earthy richness. Of course, you may want to cut back on the garlic, so you don't waste that amazing truffle flavour and have it overwhelmed by GARLIIIIIC. :3
