
The Farmstead Biscuit
~Made in a 12ct. Muffin Tin~
Filling:
1 lb bacon
8 oz shredded cheese
12 eggs
Veggies: bell pepper, zucchini, broccoli, mushrooms, or whatever you prefer
Biscuits:
1&1/4 cup flour
1&1/2 t baking powder
1/2 t salt
1/4 c butter
2/3 c milk
Directions:
-Preheat the oven to 325
-Grease muffin tin.
-Fry all the bacon.
-Cube veggies and cooked bacon.
-Mix all the biscuit ingredients together.
-Add biscuit batter to the bottom and spread evenly among the 12 tins.
-Push it flat to fill the bottom.
-Add in filling in layers, starting with bacon, then veggies, then squish it all down to push as much of another
layer as you can in the tins.
-Open the eggs, and dump them all into something you can pour out of. Fill each tin, leave only 1/8" from the
top.
-If you run out of egg mixture, scramble one egg at a time to add.
-Season to taste, & add cheese on top.
-Bake 325 for 20 min

That looks yummy! I'll have to try it. It also reminds me of what me and my bros used to eat for brekkies before a big day of raising hell.
Ours was nearly the same but we fried up diced potatoes in the bacon grease, then when they were crispy added the veggies and eggs and melted cheese over the top. That'll keep you going for hours and hours!
