
Ultimate Seasonal Bread Recipe w/ Piña Colada Topping

Ultimate Seasonal Bread Ingredients:
•Filler - Very Ripe[B]/Puree[P]/Shredded[C]/Grated[Z] - 4-5 large[B]/2 cups/[LP]*
•Butter - Unsalted - Room Temperature - 6-1/2 tablespoons
•Eggs - 1 Whole + 1 Yolk (or 1-3/4 Flax/Chia Eggs)
•Sugar - 1/2 cup white + 1/4 cup packed dark brown**
•Flour - 2 cups All-Purpose (AP) Flour
•Baking Soda - 1 teaspoon
•Salt - Kosher/Sea - 1/3 teaspoon
{Optional}
•Cinnamon - 1 teaspoon
•Extract - Vanilla - 1 teaspoon
•Combination - Berries, Nuts, Oats, and/or Chocolate - Whole/Chopped/SC - 3/4 cup***
Ultimate Seasonal Bread Method/Directions:
•Preheat Oven to 340°F (~171°C)
•Lightly grease a 9x5 loaf pan with 1/2 tablespoon of the 6-1/2 tablespoons butter
•With 1/4 cup of the 2 cups flour, sift & distribute into loaf pan
•[B]Mash bananas in a small bowl with a fork or masher/[LP]Combine lemon and poppy*
•In a medium bowl, cream butter and sugar, then beat in the eggs, 1 yolk at a time
•(Optional) Add the vanilla and/or Combination to the butter/sugar mixture
•In a large bowl, sift flour, baking soda, and salt together
•(Optional) Sift in 1/2 teaspoon of cinnamon in with the flour mixture
•Fold the butter/sugar mixture and filler into the flour mixture
•Pour the batter into the loaf pan
•Bake for 45-55 minutes (Depending on if it is dry, moist, or wet)
•Remove from oven and let cool in pan for 5 minutes (while making the topping)
•Transfer bread onto wire rack on a cookie sheet and let cool for 25-30 more minutes
•Transfer to proper cutting surface
•(Topping) Cover with topping made
•Slice with a serrated bread knife and serve
•For best results, let sit overnight before cutting
Piña Colada Topping Ingredients:
•Sugar - Powdered/Confectioner's/Icing - 2 cups
•Juice - Pineapple - 1 tablespoon
•Alcohol - Rum - Calico Jack Coconut - 1 tablespoon
•Milk - Evaporated or Unsweetened**** - 2 teaspoons (Icing)
•Butter or Cream Cheese - Softened and Unsalted (Butter) - 8 ounces (Frosting)
{Optional}
•Coconut - Grated - 1 cup
Piña Colada Topping Method/Directions:
Icing:
•Mix the sugar with the milk, pineapple juice, and Calico Jack
•(Optional) Top with grated coconut before icing sets
Frosting:
•Cream (cream cheese or butter), slowly adding juice and rum
•Beat in sugar, 2 spoons at a time, until all gone
•(Optional) Top with grated coconut
Fun Idea:
•Divide the batter into a greased muffin tin/pan
•Bake at 325°F (~163°C) for 15-20 minutes
Adjusting to your needs:
Egg Free [Flax/Chia Eggs (1 per whole)]:
•Flax/Chia - Ground - 1 tablespoon
•Water - Warm - 2-3/4 tablespoons
•Water into Flax/Chia; Whisk; Cool in Fridge for minimum 15 minutes, maximum 1 hour
Original Nut/Dairy/Soy/Egg/Vegan Friendly Topping:
1)Sugar - Powdered/Confectioner's/Icing - 1 cup
2)Water/Milk - Whole (Milk) - 4 teaspoons
3)Butter/Cream Cheese/Subsititute - Softened/Unsalted (Butter/Substitute) - 8 ounces
•Mix first 2 for Icing -OR- Slowly beat 1 into 2 & 3, after creaming, for Frosting
*[LP] Lemon Poppy Mixture (For use in Lemon Poppy Bread):
•Poppy - 2 tablespoon
•Zest - Lemon - 3/4 tablespoon
•Extract - Lemon - 1 teaspoon
•Juice - Lemon - 1 tablespoon
Fat/Sugar/Dairy/Gluten Alternatives & Other Allergies/Alternatives/Notes:
*[B] = Banana / [P] = Pumpkin / [C] = Carrot / [Z] = Zucchini / [LP] = Lemon Poppy
**Light Brown or White would be good replacements for Dark Brown
***SC = Steel Cut (for Oats)
***Combination - 2: up to 1/2 cup each; 1 and 3+: up to 3/4 cup total
***Chocolate must be either in chip form or chopped/grated if in whole form
****Depends on Dairy or Non-Dairy Varieties
•Dairy/Fat (Butter): Applesauce, Unrefined Coconut Oil, or Sunflower Seed Oil
•Dairy: Use Tofu Spread instead of Cream Cheese
•Dairy: [Heavy Cream] or [Half & Half] works in place of Evaporated Milk
•Gluten: Bob's Red Mill's All-Purpose Gluten-Free Mix
•Sugar: Use 1/3 to 1/4 cup [Maple Syrup] or [Honey] instead of White/Brown Sugar
•Alcohol (Calico Jack): 1-1/2 teaspoon coconut extract with water/milk accordingly
•If your food sensitivity is not listed, please adjust the recipe accordingly
•Both of these recipes are able to be split and be used with other toppings/cakes
