That's awful :( You'll want to get the drywall and insulation out as quickly as possible and spray the studs to get rid of mold on them and start drying the house.
Be sure you protect yourself against the mold. If there's extensive growth I'd urge to use at a minimum a half-face respirator with particulate filters that are NIOSH certified. The cases for these are magenta in color (or can use a combo magenta/yellow filter). Repirators come in three sizes as well so you want one that appropriately fits your face as well. Ideally you would be fit tested on the respirator, likely using a qualitative method where a hood is placed over your head while wearing the respirator and a saccharin or bitter solution is sprayed inside the hood to see if you can detect it. You also want to perform a function test of the respirator for positive/negative pressure. There are procedures for all this so just make sure you look it up. I don't know if you're doing the cleaning yourself, but you'll want to make sure your health is protected against black mold. Alternatively an N-95 might work as well...which would be easier to get than a half-face, though still want to make sure it's fitted to your face properly
