
Well one of the most classic of cookies and a favorite to many is that of the, chocolate chip cookie! Now this is a cookie that has been done MANY, MANY, ways. This particular one though is relatively simple ingredients and loaded with chocolate. This cookie comes out crisp on the edge and soft in the center. It's based off a recipe I learned in culinary school which was based off of a recipe gained from the bakery of a Ritz Carlton.
This recipe is large batch and makes a good 12 dozen cookies with weights.
I make these for almost every FWA.
Anyway, onto the recipe!

Chocolate Chip Cookies
1 lbs 4 oz butter (Softened)
1 lbs Light brown Sugar
1 lbs Dark brown sugar (And yes, I've tried it with 2 lbs of either one, and it is better with the mix.)
1 oz. Salt
Cream above ingredients, scraping bowl several times, until batter turns light brown.
9 oz eggs
1 oz vanilla
Slowly mix in Eggs and Vanilla until all combined.
Scrape down bowl
2 Lbs All purpose flour
Slowly mix in flour until flour is moistened.
Scrape down bowl getting bottom of bowl especially
2 pounds Chocolate chips
4 Oz butterscotch chops
4 Oz white chocolate chips
Fold in chocolate chips. Chill dough for an hour in fridge.
Form dough into balls or simply drop onto baking sheet and bake at 350 degrees for about ten minutes or until the edges of the cookie have started to brown. Remove from oven, let cool then place on cooling rack.
Enjoy your cookies!
