Kai's Matcha (Green Tea) Chocolate Chip Cookies v2.0
1 cup softened margarine (you can use butter, but I recommend against it)
1 cup granulated sugar
2 egg whites
1/2 cup confectioner's sugar
2 2/3 cups flour
2/3 - 3/4 cups semi-sweet chocolate chips
2 tablespoons matcha powder
2 tablespoons (6 teabags) green tea leaves*
2 tablespoons lemon juice
1 tablespoon coriander powder
1/2 tsp baking soda
*I reccommend getting cheap tea bags, as the finer texture of the tea is better for these cookies.
1. Tear open 6 green tea bags and empty into a small bowl. If the texture of the leaves is not very fine, consider grinding them in a spice mill.
2. Add the 2 tablespoons of lemon juice to the tea leaves. Set aside.
3. Cream together 1 cup softened margarine (2 sticks) and the sugars untill light and fluffy.
4. Mix in egg whites, 2 tablespoons matcha powder, 1 tablespoon coriander powder, and the green tea/lemon juice mixture.
5. Mix the flour and baking soda together, then add the mixture 1 cup at a time until the mixture forms a dough.
6. Fold in the chocolate chips.
7. Chill the dough for 30 minutes.
8. Preheat the oven to 350F.
9. Drop cookies by spoonfuls onto cookie sheets, preferrably lined with parchment or foil. If not, grease them slightly.
10. Bake for about 10-12 minutes.
11. Remove from oven and allow to cool. Enjoy!
