I wanted a cookie at 3 am and had random ingrediants so I made 3 dozen.. I only ate one and a half so anybody wants a cookie come on over.. lol
1.5 cup flour
2 cup oatmeal
1 cup sugar
1 cup brown sugar
1tsp baking soda
1tsp baking pouder
1/4 tsp salt
tsp vanilla
3 medium eggs
half cup butter
half cup crisco
1.5 cup peanut butter
Combine dry ingredients in bowl...
Combine Peanut butter/butter/crisco- heat slightly in microwave and mix well
add vanilla and eggs to peanut butter mix
slowly stir in all dry ingrediants
place in very small balls on cookie sheet spaced apart (smaller balls.. fluffier cookies)
Bake 15-20 mins 350 degrees.. keep an eye on them.. take them off while still a bit soft and let cool on rack for maximum fluff
makes a couple dozen depending on size

Dark chocolate is a great idea, and I would never have thought about that!
I admit I am most partial towards white chocolate, but I will have to give dark chocolate a try! I like to use European chocolate when I can as the taste of chococate from over there is the best!

Darn, if you were anywhere near Chicago, then I would have gladly taken those cookies off your hands!
I reckon you are right that white chocolate and peanut butter would not be the best combination. This may sound weird, but sometimes I would run out of chocolate chips because I would eat handful of them instead of putting them in the mix!
