Delicious puff pastry with strawberries and a vanilla custard filling <3
Creme patissiere:
1 vanilla bean
2/3 cup milk
2/3 cup heavy cream
4 egg yolks
3 Tablespoons sugar
2 Tablespoons all-purpose flour
enough strawberries for the pastry
Slit the vanilla bean and scrape out the seeds. Put the milk and heavy cream in a pan and add the seeds and pod. Bring almost to a boil, then allow to stand for 20 minutes.
Beat together the yolks, sugar and flour. Remove the pod, reheat the cream mixture, then gradually beat into the yolks.
pour back into the pan and cook on low heat while stirring for 4 - 5 minutes until very thick. Pour into a bowl and cover with plastic wrap, cool.
Puff pastry:
1/4 cup unsalted butter
2/3 cup water
1/2 cup all purpose flour. sifted
2 eggs, beaten
1 teaspoon vanilla extract
Lightly grease a large baking sheet and spritz with water.
Melt the butter in a pan with the water. Bring to a boil and remove from the heat. Add the flour and beat until the mix forms into a ball. Allow to cool for 15 minutes, then gradually beat the eggs until smooth and glossy. Add the vanilla extract.
Pipe or spoon the dough onto the pan spaced well apart, bake in a 400 degree F oven, for 20 - 25 minutes or until risen and golden brown. Slit pastry in half and place back in the oven for 3 minutes.
Open each puff pastry and fan out strawberries, pipe or spoon the custard on top and place the pastries back together. Serve immediately and enjoy <3
