* Actually added some crushed-up leftover chocolate coated peppermint sticks from Christmas, so its really Peppermint Hot Chocolate Cookies :P
Hot Chocolate Cookies
*optional
Ingredients:
2 sticks room temperature butter (some call for 2 1/2...leave it at 2 folks)
1 cup sugar (cut it down to 3/4 cups)
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla
3 1/4 cups flour
4 packages Hot Chocolate Mix (not sugar free)
1 teaspoon salt
1 1/4 teaspoon baking soda
1 teaspoon baking powder
1 cup semi-sweet chocolate chips
a whole bunch of leftover candy canes, crushed (use a Ziploc bag and a meat tenderizer/mallet and you're good...about 1/4 of a cup)*
mini-marshmallows*
(VERY optional- I tried them in another batch, they didnt look so great XD- if anything else, I would use the hot chocolate mix with the marshmellows IN IT to the cookie mix!)
1/3 to 1/2 cup water
Instructions
1. Cream together both sugars and the butter until light and fluffy.
2. In another bowl, whisk together the dry ingredients.
3. Mix in the eggs and vanilla.
4. Slowly add in the dry ingredients. I did this in stages, scraping the bowl each time.
5. Add the chocolate chips to the cookie dough. If you find that your mix is still dry- and it does have a LOT of flour- thats when you can add the water in until its more workable.
The recipe says to chill the dough for an hour. Did it for 1/2 hour instead :3
6. Drop onto a parchment lined cookie sheet. Use a trusty ice cream scooper.
7. Bake them in a preheated 350 degree oven for 9 to 11 minutes. (with my slow oven...more like 20) Let cool for 5 minutes before removing from the pan.
Enjoy with.....well, more hot chocolate :P

I had to look at the sticks to make sure- but, 113 grams for each stick.
The salt? Yes...and no.
What I mean by that is, it does two things:
1.) It acts as a balance for the sweetness
2.) It also acts as a leavener- since it reacts against the baking soda and powder :3
