Well folks, you know that when you have an Easter with a load of food with it,... yeah, you end up with a lot of HAM (and yes, there's lamb too, I'll do that the next time if I get that on my plate :P)
And a croque-monsieur ? Think of it as a french toast sandwich :B

Ingredients:
Optional*
3 large eggs
apple butter*
1 small onion
1 tablespoon unsalted butter
leftover HAM
slices of brie
4 slices country white bread
salt and pepper to taste
All you need is a large saute' pan...slice the onions up first, obviously, turn the heat on a medium high; throw in the butter and saute' the onions. I added a bit of sugar (along with a bit of salt and pepper to season) to caramelize the onions, however, you can always just saute' them as is until translucent. Keep that saute pan going on the heat!
Once that is done, put those onions on a separate plate to cool for a bit.
Then get a decent sized bowl- crack open and put in the three eggs, and whisk them around with a fork or something to break them up. Soak the bread on both sides with the egg mix, then just cook in the pan until both sides are brown. (about 3 - 5 minutes or so)
THEN- on another plate if need be (thank goodness for paper plates :P)...
Spread the apple butter on... ( and if you dont like the fruit idea, you can just leave it plain ~ put on dijon mustard ~ honey mustard ~ sriracha chili paste ~ etc :P ) ...then, put on the onions...then the cheese...then the HAM...and pretty much another slather of apple butter on the other slice, plus a bit more cheese and onions if so desired.
Makes 2 croque-monsieurs, and if you want the cheese a bit more 'melty' you can always put the whole thing back on the saute pan and treat it like a grilled cheese...but give it maybe a few more minutes if that, brie melts quick!
