This is something I've been composing for a fantasy video game a friend is making. The idea of this piece was to use a mix of the aeolian scale mode and a middle eastern scale mode and then, through out the piece, 'update' and the arrangement/instrumentation of the thematic material to make it feel ancient and forever.

Well, to some degree I do. That's the luxury of using MIDI and libraries of sound samples. You don't have to know how to actually have to know how write for these instruments. I will be creating a score for this (and for several other compositions). One day I'd like to get them performed live.
I used the orchestral and choir jam packs for Logic Pro. Though I've heard Embertone makes some good samples http://embertone.com/freebies/intstrings-lite.php
