Despite using professional antivirus that I paid for and making an entirely new account, turns out nothing is sacred!!!!! Im not using discord for a good while until they fix their service.

Honestly, I suspect it might be a process running in the background that does this. Why would a bot have access to your account if they're both seemingly unrelated (I don't think you can use the same email to make two accounts) ? There might be a process reading your input when you're trying to connect to a Discord account. It's just a thought though, I could be wrong.

I wouldnt say its discords fault fully here. Depending on the type of infection you have, a antivirus wont fix it. You might have to fully wipe your system and start from scratch. I'm sorry you have to deal with this.
