So I've been doing white text with a black background for the last year or so regarding the PDF files I upload to this website. I started doing it since I believed it was easier on the eyes. After talking to an experienced illustrator who read one of my things, I learned that it actually strains your eyes more than the default black text on a white background. Apparently my decision to do the inverse was super dumb and violated basic color theory, so now I might need to spend an hour or two replacing a great deal of the current PDF files on my profile to fix this issue.
Do not make the same mistake I did. Sometimes things are the standard or the tradition for very good reasons.

Additionally, your environment matters too. If you are working in a well-lit place, your eyes are adapted for brighter colors and you'll want a brighter background. If you are working in a darker place or at night, you want a darker background to be complimentary with your environment.
As someone who spends a lot of time indoors and in the dark, I find darker color schemes much more comfortable. There is no one-size-fits-all solution.
