The Star Wars Prequels Were Good
I watched episode 3 again to test a dvd player I'm going to sell. And man is it just as good as I remember. There's some pretty substantial flaws, don't get me wrong. Like the CGI didn't age very well. Some of the writing isn't so good, and some of the characters' back stories were a little iffy. But there was so much good there as well. We got tons of world building. The battles felt like they had weight to them. All the new crazy Alien societies Lucas came up with. I cared about this universe and the people living in it. Ewin McGregor's Obiwan. Palpatine and his backstory. Even most of the supporting characters were good.
There's even stuff in the prequels I liked better than the originals(I know, blasphemy).

Prequels E01-E03 are like this child reaching coming of age. The world is expanding, all things grow their reasons why. We are no longer in sweet innocence of not knowing.
Last three episodes (E07-E09) are akin to a grown person: kinda repetitive, yet there are still some things to discover.
If you have time, do take a look at Clone Wars animated series. There's shit ton of episodes, around 8 or 10 seasons (lost count, there's so much) and continuing into 4 seasons of Bad Batch.
Having said that: his creation is Canon to the Star Wars Universe.
In which case, avoid Acolyte like the plague.

As someone who finds the original trilogy superior, I love seeing people recognizing this. I guess we can thank the exploitation and dragging through the mud for at least letting people see the prequels are at least "better/enjoyable" now. I always loved Revenge Of The Sith though.
There's a very neat book, The Katurran Odyssey, illustrated by the creature designer on Phantom Menace. I love that it's basically about a child coming of age and learning that God isn't what he's been led to believe. (It doesn't hurt that all the characters are animals.)
