Happy Holidays & A Note on Cashews...

So for everyone that I have yet to send Holiday cards to...Um...Happy Holidays! **Hides the stack of cards he has yet to mail out** Some of you will be getting cards mailed to you eventually...Once I take them to the mailbox and/or figure out your addresses, but since you will most probably not receive them until mid-January I thought I'd cover it here.
Also happy holidays to all you folks watching me that I do not know so well. If you see me at a con or online feel free to say hi. If I seem distracted or away just pester me until I respond.

On an unrelated note...I have always wondered one thing since I was a little fetus. Why are there no cookies with cashews in them? Being a huge cashew fan and also a fan of cookies, this fact has always baffled me.
I always assumed that no one cooked with cashews because they are mildly more expensive than other nuts...but I have recently discovered there is a possible alternate reason for there absence from confectionary tidbits.
Today while collecting cookie-baking materials I discovered that cans of cashews were buy one get one free, which filled me with wonderous joy. I decided to invent a new cookie recipe by taking chocolate fudge cookie dough and mixing in coconut and cashews.
They...didn't cook. I may have added too much coconut, but it took about twice as long as usual for them to bake properly. When they were done the cashews were a little dark, slightly burned but not too badly. I thought "Oh joy! Toasted Cashews!" thinking they would be delicious like other toasted nuts. I was adequately disappointed.
It turns out that when a cashew cooks its flavour becomes that of burned corn. While in the context of the cookie as a whole they do not taste bad, picking them out is not recommended. I think next time I will use non-cashews...Or maybe If they are ground finer they won't burn as much.
Experimentation is needed. I will keep you updated on my research...Which will commence next winter.

I'm a huge fan of pistachios, and there don't seem to be any recipes for that either. Haha.
