Is there any trick to properly scanning, or editing it after - or is it all up to the ability of the scanner in the end?
I feel like a lot of my stuff ends up looking not very true-to-life, and I want to fix that if possible. I use photoshop CS4 for my editing. Not sure the make of the scanner, though.

[also sorry for taking a while to respond, got sucked into a Torchwood-athon.]
And yeah, 600dpi's pretty huge.
So I would recommend tweaking in levels some more... not great advice, that's the only tool I really used (or knew how to use).
If that turns up fruitless I guess I'd just ask someone more knowledgeable in the Photoshop artz.
