So this is the second apple thing I've made this week. This previous weekend was the Ellijay Apple Festival, so we have tons and tons of apples. After last weeks success with the apple crisp I decided to do something a little more involved this week. This one is still a pretty easy recipe to make and while it is similar then last weeks it is more difficult if only because there are more steps. Just FYI I didn't make the pie crust I used premade, for shame, i know, but what can i say. Here's the recipe if any of you want to try it out.
Filling
1/2 cup sugar
1/2 cup brown sugar
1/4 cup all purpose flour
1/4 cup fresh ginger, coarsely grated
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla extract
5 apples, peeled, cored and thinnly sliced.
Topping
1/2 cup all purpose flour
1/2 cup oats
1/4 cup brown sugar
1/2 cup butter, softened
Preheat oven to 400 degrees. Place a premade dough on 9 inch pie pan and lightly dust with cinnamon. Crimp edges with a fork. Combine filling ingredients in a large mixing bowl. Mix until apples are covered well. If you can let this mixture sit for about half an hour we think the apples will taste more delicious but this is optional. Spoon filling mixture into pie crust. In another large mixing bowl, mix topping ingredients until the butter forms crumbles. Evenly spread topping over pie. Wrap the outer ring of crust in tin foil and cook for 30 minutes. Remove foil then cook for 15 to 20 minutes or until crust looks golden brown. Let pie cool for 1 hour, then enjoy. Once again it's better served with homemade whipped cream and caramal but whatever works for you.
