I haven't heard the Adam's song one. But 'Take it on the run' would be an interesting cover to hear. Also, if you are into a little bluesier stuff, try out some of Stevie Ray Vaughn's stuff. Blues is way easy to come up with songs.

Basic blues formula example:
Three cords. Ex: high E (up by the seventh fret), G, A. Then record, or get a loop pedal, and solo on the minor pentatonic high E.
