Here's some screenshots I took of my mare adventurer in modded Skyrim.
Note the anatomically correctness and "horse" tagged race in the skills and load screens.

But ya that's nice.
You're in luck. Since werewolves are already in the game there are several play as a werewolf mods and yes I saw a mod to make werewolves anatomically correct.
