Gnocchi with Mushroom Pancetta Blush Sauce
13 years ago
This recipe popped into my head today at work. I was thinking gnocchi and wanted to create a rich sauce to go with it. Lemme brag a moment and say... it was good enough that I sopped the remaining sauce up with a piece of bread and licked the plate clean...literally. xD
Cook time is approx 20 minutes, so is a very time efficient dish.
Ingrediants!:
1/2 lb gnocchi (can make your own or get quality pre-made ones)
1/2 cup heavy cream
2/3 cup chardonnay
1 cup of diced Pancetta
2/3 cup fresh Baby Bella mushrooms, diced or sliced (either will do!)
3 tbsp grated romano cheese
Canned whole tomatoes, 2 (You'll need two of the tomatoes out of the can), liquified.
Olive oil
Kosher salt
1/4 tsp black pepper
1 garlic clove finely chopped
1 tsp basil
---
Bring water in a pan to boil, add some salt to the water. When it's boiling add the gnocci and cook for 2 minutes. (or more if you don't like al dente). Drain immediately.
While that's going, heat about 2 tbsp of olive oil in a pan, add proscuitto and mushrooms. When they're browned add the chardonnay. Reduce to a simmer and mix well. Add basil, garlic, and black pepper. When the wine is about a third of the way gone, add the tomato puree. Then the cream and cheese and stir continuously until sauce reaches a good consistency. Turn off heat.
Add your gnocchi and mix in well with the sauce. And enjoy your mouth orgasm.
