Why do people still call me a kid?

It kinda gets to me. I hate being considered one of those youth's who still go to higbschool that still haven't fully matured.
I work with people ranging from 19 to 40, after working around a lot of 20 year Olds I believe I have changed a lot maturely.
I am 19 yes, but in my country I count as an adult. I can vote, I can legally buy alcohol, I can drive, and I am studying.
Anyway, my point is, it bugs me. Considering I deal with people older then me, they can be incredibly immature themselves.
I go to my younger friends birthday, he just turned 18, I go to his party and a lot of people from his high school went. They seemed so mind blown I was a year older then all of them! Whole reason they presume so is I don't look 19, I look rather 16 judging by how many who have mistaken my age,
I did a project for a city council, I was working with a few people my age, one guy asked how old was I? You seem so mature, but look young, Atleast that was an acceptance for that situation of how I look, wish it happened more..
I will admit I have my moments, but not as commonly as you think.
Anyway I was thinking, should I remove my age off my profiles? To many people are presumably judging me from this perspective.. :(

Age matters not, but the deeds and the actions of the soul to judge the worth of a man... or something like that.
Ppl still call me kiddo. xD
People usually believe I'm at least 3 years younger than I actually am. (I'm also 19)
It might be because of my size though, I'm only 5,11' tall. D:
It's also bugging me like hell, most people are saying "Why does it bother you?? I'd kill for people to think of me as younger than I actually am!" but meh, I dunno... I've always been proud of myself and couldn't wait until I hit age 18 and legally do everything. :/ I don't want to be or appear any younger.
I don't think you should remove your age, though. I don't judge people from their age, rather from how they're acting or presenting themselves in general. Sometimes I might look at peoples art and then take a look at their age and think 'Wow, for their age their art is pretty good' or similar, but nothing more. I don't see anything bas about showing off your age. :3
