Lol it ain't easy, but that's my strategy. Works too. Put on some fire protection, time your rolls, wait until he starts a long attack before chugging, and you got it by the ass.
Best chance is when he goes for that long grab animation. Play Ring around the Rosie around that rock when you're low, Back up (a ways behind the rock,) and chug right quick.
Also, parrying Gwyn is preeeeety damn lame. It's about as unsatisfying as it gets.

wait....you're having trouble with gwyn?....weird...guess my play style just made me think Gwyn was a little BITCH compared to Bed of Chaos...meh, It's not about getting the fuck away, it's about timing and DODGING. You'll want high-stamina, you'll NOT want to use parry (didn't bother it with, just carry a high-power weapon, mine was the...fuck, I forget, anyways, either way, high strength, high power weapon), when he starts using the attacks he has to charge up for, roll back 2-times, then chug, he'll have time to charge and strike, but the second roll puts you just out of the extended range of the thrust attack, as soon as the animation for a chug comes to a close, start rolling the fuck around, this will save your ass, strike only when you are BEHIND the idiot, and just as he's using an attack animation that doesn't involve swinging his blade in ways that it will tough you behind him. remember, strafe-rolling is your best friend, making target-lock your best friend too.


...btw, beat him 2nd try on the 360 version using a level 70-something character.
