If you are unaware of the fact you are eating a human, you are NOT a cannibal. I am reminded of the story of a british woman who was working in Tanzania and regularly ate hot dogs from a certain vendor. After she moved back to England, she heard that the vendor was arrested for murdering, butchering and serving people as hotdogs to his customers. The British woman was obviously disgusted but admits that they were the best tasting hotdogs she had in Tanzania.

And yes, I would definitely eat a person to prolong my own life. I wouldn't necessarily kill the person if they were still healthy, but whoever dies first becomes food. And if you think about it, eating people would give you all the nutrient that your body requires. Though you would be risking protein poisoning if you eat only the lean meat. And yes, I have put a LOT of thought into this. And not recently either.

I think if a person is not aware they are eating human flesh then I do not think they should be classified as a cannibal, in the same way that we wouldn't stop calling someone a vegetarian if they unknowingly ate meat.

For the second question, I would have no problem eating another person to survive. Hell, I've joked that if the world ever went bust and society collapsed I would start eating people almost immediately. Cannibalism is my answer to everything.
Would it make a person a cannibal to eat human to survive. For the time that they were eating human flesh, I guess so. Just like with my previous vegetarian analogy, if a vegetarian eats meat in an extreme situation for survival it is not like they can't go back to being a vegetarian in normal society.

Though I personally feel that what truly defines cannibalism is someone who eats human flesh as a choice. A cannibal just has an expanded menu.
