Hey... I forgot to ask this question in my turkey day post. Are you a white meat or dark meat person... that is if you eat meat. I prefer dark meat. It tastes much better in my opinion and I'm the only one in the house that likes it so I get all of it Muhahahaha! Not that I don't like white meat but so many times I've had dry as a bone white meat that I'm almost fed up even trying it. Although my wife made a great white meat this year.
The secret...
Cook your bird upside down. Seriously. That way the breast meat stays in the juice at the bottom. You bird will look super ugly when you take it out finally but the meat will be so much better.

If the white meat is dry, then I just put some gravy on it. But I do like both kinds of turkey meat. Which is great, because my mom likes dark meat and my uncle likes white meat, so it all kind of evens out.

ok for the one who is alil more out thar try deep fry ok i know i know to much fat but hell your eating a weeks worht of food in a day anyhow so its good moist and tender + you can put good dry rubs on
or i like my way....on the brest gently peel back the skin from it and slather some buter and herbs between the skin and brest then *dontthink me wired* stuff the bird with appels and onyons trust me ther good eats after and cook you stufing in seprit pan so you know its cooked ^_^
I preffer white meat over dark, but not dislike either much then the other. I share one secret too:
Dip the white (chiken-breast) meat in milk and squeeze garlic on it! Let it in for 8 hours. I usually dip it at 20 p.m and the next day i can start making it after getting up! Make a "coating" (You can use the milk for it so it don't go to waste! garlic milk+flour+egg+bread-crumbs) and fry it! It'll have the hint of the garlic, but still taste like meat should! Serve it with rice or smashed potatoes! For the rice, add mayoneize and for the samshed potatoes, add milk a butter! Will tingle you from head to feet, i guarantee it!
