I don't see anything unprofessional about picking which projects you select to tackle.

Honestly, first-come-first-served is INCREDIBLY unusual in any creative realm, that is literally a mindset meant for 'production line' type work where it's just grinding away like raiding in an MMO.

Perhaps so. I suppose you're not really committed to anything until you agree to do the piece.

In my experience, so long as you're upfront about the process and you leave yourself open to communication, they'll be fine with it. Just keep an updated queue visible somewhere that commissioners can check to see the status of their piece, you shouldn't have a problem. :3

I agree with mab. As long as you tell people as part of your TOS that you work that way, of course!
I've seen other artists mention that they jump around between different commissions as they feel inspired, so it's not unheard of.

I don't think so at all. As mentioned above, as long as you let people know beforehand that's how you're gonna work then they should be fine with it. Really, even if you go way out of order, I think as long as you get their piece done within a reasonable timeframe the it's all good.
Just don't do like some artists and spend the money before you even start the comission. You never know when someone is gonna ask for a refund, but just do like I do and make the sale final after a sketch or some kind of progress is shown. I've only been asked for a refund once (due to time issues), but the commissioner had a very valid point and I was more than happy to give him his money back. Just, y'know, be reasonable with everything... -v-

Also I would loooovvee if you opened them back up. You have a really cool style and I'd enjoy seeing where it goes. 'v'
