Coconut Pikelets (pancakes)

So I made these paleo friendly pancakes the other day, they came out really good but the pancakes have to be made small or else you wont be able to flip them. Don't stray from the recipe to much because the coconut flour used in these really soaks up all the moisture and if you add just a bit to much flour, it might ruin the whole thing heh.
Batter:
2 tsp. Vanilla Essence. (I checked into this online and unless you're planning to make your own just use extract, pure if you have it)
1/4 tsp. Cinnamon
1 tsp. baking soda
4 eggs
1/2 tsp salt. (I tend to leave salt out of the recipes)
1 C. coconut milk (Not sure if they mean canned or the kind you drink. I used the Silk pure coconut milk.)
1 Tbsp. honey
1/2 C. coconut flour
1/2 C. blueberries or raspberries if desired. (can probably do just about any small berry with these and they'll be fine.)
Preheat non-stick skillet over medium heat.
Whisk together milk, eggs, vanilla and honey.
Sift flour, cinnamon, baking soda, and salt into liquid mixture.
The recipe says to use oil in the skillet but I've done this with non-stick spray, I know not exactly paleo but it worked and also used coconut oil worked too but I keep forgetting that 1/2 teaspoon of coconut oil will grease an entire 11" skillet.
Place tablespoon size batter on skillet and cook until golden brown on both sides.
Warning! These do not bubble like your normal pancakes and cook very quickly, keep an eye on them, you might see little bubbles on the edge but don't go by those. Be paranoid about burnt cakes and you'll be fine.
Serve with honey or maple syrup.
