This is why I like half-now, half-later. So both people have an incentive not to cheat.
Partial pay -- paying for the involved piece of artwork, at its respective prices as it progresses through the stages: sketch, line-art, color, shade, and involved details? Of course, you would take pre-pay on each one, but you could agree on a stopping place and everyone wins.
1. Multiple payments will make end price larger as instead of one PayPal fee I'll include 5 PayPal fees in price. Each fee is minimum ~1$, so for low-cost auctions what will be a dramatic price jump
2. Also I don't like idea of multiple payments because they would slow down process. I live in GMT+3 that is most incompatible timezone
3. Trust issue. You either trust me, either not. We live in social world, so every trouble will be spread across instantly. I'm interested in satisfied customers. You can talk directly to any of them before buying if you have trust issues. I have special journal item for customer reviews.
