Vegetarian Dishes and Decongestants

I'm looking for some good vegetarian recipes to increase the variety in my diet. If you have any you can recommend I'd enjoy hearing about them.
I'm also going to be flying to Finland in a couple weeks and need to start a decongestion regimen and I need some recommendations on decongestants that have minimal side effects. I'll have to be taking them daily for two weeks in order to prepare. I have a deviated septum as a result of my jaw surgery and the pressure in an aircraft cabin can be excruciating if my nose isn't clear.

Subway- honeyoat sub, pepper-jack cheese, tomatoes, spinach, black olives, carrots, and sweet onion sauce
Pizza- Mushroom and pineapple
Something I created:
Mountain-man fried-rice- cook some rice, before the water evaporates completely, poor in some soy sauce (I never measure how much I use). While that thickens, chop up some green onions and add it to one can Le Suer very young sweet peas with mushrooms and wild onions (yes, you want both, it makes a difference) just before the rice is thick enough to eat, mix everything. I put it all in a glass pot with a lid (is there another name for that?) and place that on the burner for a few moment to warm it up a little more.
I named this dish mountain-man fried-rice, because onions always remind me of the wilderness and if you were out on a mountain you couldn't really fry your rice so you do the next best thing.
About the congestion- I used to go to a gym that had a steam room. It broke everything loose all at once which nearly choked me a few times, but I learned to step out and cough for a while before returning. Try that.
