Mind you, this stuff is *banned* from my house in all its various forms.
My parents used to throw parties with this stuff during the summers, and my actually built an entirely new house at the back of the property just for this. Not a full-sized house, mind, but still, way nicer than a mere shack. That's how potent the smell is. Neither I nor my brother would go near that house for days afterwards. Ugh! XP

Pickling is done by putting something in a broth of water, sugar and vinegar. Fermentation is done by heating something, adding yeast and then letting it stew.
Big difference
Thus, danish pickled herring = tasty (though perhaps not for all)
While surstrøming = a horror from the depth of r'lyeh
