messing with this SUPER old doodle i have of sam, my sona
which of these is better for an alt?

Well. I'm NOT a huge fan of the second one because the black really doesn't flow with the neutral brown color scheme that you have going on for the rest of the body, it feels too dark compared to the rest of her.
I honestly really like the third one, since it's such a different color, but it's still bright and cheerful. I think it's really cute and that you can still maintain the same feel for her, while having a fun sort of alternate haircolor.
So, I prefer the 3rd, but the 1st is also really nice. But I really just can't see the 2nd one working out.
Obviously this is just my opinion and you can do whatever you like. c:
Except I prefer the first one, the two toned colors I feel bring more attention to her stripes (striped body, striped hair? lol). I do think the black is too dark, Its cute but maybe more so if she had black stripes? I also like the last one but I don't feel like she has as much personality.

I say the first one because one thing people don't think of when designing a character and it's colors is that it must look good with both the fur and the personality of said char.
The black one, everyone does it, and it is TOO contrasting with her fur color, she is a lighter, less bright to contrasting scheme, so make sure to stick to that.
As for the third one, I see what you were trying to do with the two-tones, however I am not sure if they look good together. I really do like it though!
