the "stick with a single element for as long as you play" killed any interest I had in the game.

You can switch flights if you feel like it.

You can also trade elements. It's just that you breed only one.

There's also a wiki around that elaborates more than the starter text.

I see... well thanks, but I'm gonna wait until it's more fleshed out. I got starbound and what seemed like fun at first grew tedious and chore-like with the hunger mechanic as my character kept starving to death while I was still getting used to the menu layout and trying to build a simple home-ish structure that wouldn't get me torn apart come nightfall.
