Dragon based on famous fairy tales, maybe...

Deep sea usually does well, lots of fun with bones and transparency, perhaps elementals to practice fire and liquids and solids, maybe even do stuff like plants or animals or unique fusions of the two so it could be something like tree frogs where you'd merge trees with frogs for the theme so bark skin and soft slimy skin between plates of bark which is more colorful and stuff.

Things like that would be pretty neat.
