Tomato season

Let me just tell you how much I fucking love tomatoes. I FUCKING LOVE TOMATOES *Shakes you by the neck* FUUUUUUUUUUUUUCKKKKKKKKKKKKKKKKKKKKKKKKKKKKKKKK
Our tomato crops have started to ripen, so I'm already overwhelmed with canned tomato sauce and puree- any suggestions for fun things to do with pickling tomatoes or canning them? I'm pretty plain jane- I like fresh tomatoes on salad, or tomato sauce makes everything better- but I'm always in the market to try new homestyle canned stuff.

I think we both have a problem
Last year we canned a REALLY tasty tomato soup, sauce, juice, diced tomatoes, bruschetta, hot sauce, and salsa (three different kinds, apple cider, habanero, and chili).
I sub white onions for red, plus since I never have fresh chilis I use Tabasco. Also, adding some garlic is nice.
The farmers around my area are already selling tomatoes.
Not fond of Ketchup though.
Fresh tomatoes, garlic, a lot of olive oil, balsamic vinegar, basil, kosher salt, freshly ground black pepper, & last but not least Italian bread. Mmm.
There may have been a ghost pepper involved as well. There may be a small nuclear arsenal of capsaicin in the greenhouse next to the garden.
Alternately, make some fried tomatoes. Especially if you have a few green ones left.
You're lucky, we don't even have green tomatoes yet. :/

we literally have no room for canned food because there's tomato product in jars EVERYWHERE
-shivers- i dont even like tomatos unless it's ketchup.
Then there is a green, red tomato mix chutney with sultanas, onion and apple that is very nice. I'm still looking for the recipe but I remember it as mix all the fruit, add sultanas and finely chopped onion, cover with vinegar and cook adding in chilli, garlic and ginger somewhere along the way as well as mustard seed and cardamom powder but I don't recall the amounts.

I'd be interested in that chutney mix if you find the recipe- we eat a lot of indian food in the house and some chutney to eat with rotis would be radddd
Ingredients
1 kg apples, peeled, cored and sliced
2 cups (500ml) water
1 tablespoon yellow mustard seeds
1 kg tomatoes, sliced
2 large brown onions, diced
1 clove garlic, diced
1/2 cup (80g) sultanas
3/4 (150g) caster sugar
5 teaspoons curry powder
1 teaspoon cayenne pepper
1 tablespoon salt
2 1/2 cups (590ml) malt vinegar
Directions
Preparation:20min › Cook:3hours30min › Ready in:3hours50min
Place apples and water in a large saucepan. Bring to the boil; reduce heat. Simmer for 25 minutes or until apples are tender, stirring occasionally.
Wrap mustard seed in muslin or cheesecloth; add to apples. Add tomatoes, onions, garlic, sultanas, sugar, curry powder, cayenne pepper, salt and vinegar to the apples. Stir until sugar has dissolved.
Bring the mixture to the boil. Reduce heat; simmer for 3 hours, stirring occasionally, until mixture is thick and pulpy. Remove and discard wrapped mustard seed. Seal chutney in hot sterile containers. Store in refrigerator for up to 6 months.
note:
I've stored mine for up to two years and it just got better but then I think I had more sugar in it than this recipe calls for.
But if you are anything like me you are also busting at the seams with cucumbers. If you like them also, I love to make mine into a Lebanese salad called Sassouf, which is similar to tabouli but tastes a bit different. I omit the traditional bulgar or replace it with a bit of quinoa since I don't eat grains/wheat. It's tastyfresh.
Kale would have done well, shit. I planted spinache. WOE IS ME ;_: MY PLOT OF MOSTLY WEEDS.
