I think the technical term is ladder auction, it ensures that you don't spend beyond what you make and that you are paid according to the work done.

yeah, if you're going with 'whatever dog you want, materials up front' specify that anything overly complex on one piece will detract or eliminate other pieces of the suit. like really crazy specific fur patterns will be attempted, with patterns being shown to the future owner before fur gets cut etc but with additional cost. if you make it like a 2 color with simple pattern limitation on the auction, you might get fewer bites, but it will also result in an easier suit to construct
