Some stuff that I think should be in Minecraft

Bored. Drunk. High. Horny. And bored. So I'm making a list.
* Birds. The bat mechanic is already there, just make them land on leaf blocks. They would drop colored feathers. Feathers could also be dyed and a new head armor could be a feather headdress.
* Knit armor. Armor made of wool. Can be dyed. Weak defense, but if you have a lot of sheep, armor of some kind.
* Chainmail should be craftable. By making an X of iron, it makes so many chainmail pieces that are used for armor.
* Javelins made of two sticks with a flint tip. Shorter range than arrows, but a throwable weapon.
* Saddles should be craftable. Maybe horse armor too, but at least saddles
* Squid should drop an edible. Tentacle that can be cooked as calamari.
* A new tree type that starts like wheat, then grows more like sugar cane in a twiggy tree. When broken it drops sticks.
* A scarecrow that wards off enemy mobs.
* A stone golem made out of cobblestone. Weaker than the iron one of course.
* A scorpion enemy mob that spawns in deserts and jungle biomes
* Two new tree types. One that is a charcoal color and one that is more of a deep red color.
* Occasionally, when wood burns, it will drop charcoal.
* Orc villages and orcs. The have houses, guard towers and a longhouse. Occasionally a pen with horses in it. Orcs behave somewhat like Endermen, in that they are non-hostile until you get too close or attack them. The villages also have loot chests.
* Both zombie and skeleton horses can randomly spawn, but have a super low chance of doing so.
* Rubies and ruby ore should return to the game.
* Eggs should be cookable to make either omelettes or fried eggs.
* Vases. So that larger flowers can be displayed inside.
* Netherbrick fence gates.
* Obsidian slabs, stairs, and walls.
* Stairs, slabs and walls of other blocks not currently available.
* Super TNT. By using soul sand instead of regular sand in the recipe, it makes TNT that blows up the size of a charged creeper.
I'll probably remember some things I had in mind before, but for now this is what I have.

Mods add a million kinds of armor, many can be dyed. Never seen wool shirts and stuff through specifically.
Mods can change the chainmail crafting requirements, and often do.
Weapon mods add throwing weapons of many types, Including javelins
THe animal mods add a way to craft saddles, for horses and pigs, and sometimes dinosaurs.
Mods that add thousands of new food add food drops from squids.
Mods add hundreds of new trees, none that you describe though they do add fruit trees. Apples and bananas whoo!
Magic mods add golems and things that can fight mobs and keep them away for you like your scarecrow idea. Also torches that ward off mobs too.
Stone golems tree types as well as scorpions already included in the mods that add animals food and trees/magic golems.
The rest all have a specific or a few mods that handle exactly those things as well man. You need to try out the FeedTheBeast Launcher and play some packs there for sure.
