I need new things to cook. I'm trying to find lots of whole food veggie recipes but feel free to post whatever you like to make!! Chances are, if it sounds great I can turn it veggie lol.
I'm so excited for fall stuff like butternut squash pasta and and lots of stuff with rosemary and potatoes. OH AND APPLES AHHH. I like to go to the orchard every year and get a huge bag of apples. ;3; <3

4 eggs, slightly beaten
1 (1 1/4 ounce) envelopes Lipton Onion Soup Mix
2 cups grated cheddar cheese
3/4 cup chopped walnuts
1 cup dry Italian style breadcrumbs
2 (1 1/4 ounce) envelopes vegetarian broth
Mix first five ingredients together in order.
Refrigerate for 30 minutes.
Form into 1-1/4 inch balls and place on baking sheet sprayed with Pam.
Bake in 400 degree oven until brown, about 20 minutes. (I do 350 tho)
(May be frozen now.) Place meatballs in casserole and cover with 2-3 cups boiling water and 2-3 cubes or envelopes vegetarian brown broth.
Meatballs should be within 1/2 inch of being covered with liquid.
Bake, covered, at 350 degrees for 1 hour (1-1/2 hrs if meatballs are frozen).
Or meatballs may be prepared in a crockpot on high setting for 1 hour (or 1-1/2 if frozen).
1 package of xfirm tofu, dried and cubed
Rice flour (gluten free if you are intolerant) or reg flour or tempura mix
1 lg onion or 1 leek, sliced
1 tbsp fresh ground ginger or some ginger powder
3-6 cloves of garlic (i LOVE GARLIC ^w^)
1/2 head of green cabbage, chop it up as fine as you want, I usually do 1" squares
3 carrots, chopped
2-3 jalapenos, chopped
1-2 green bell peppers (red if you would rather, or one of each!)
1 carton of mushrooms (your choice on type)
Any other veggies you wanna throw in there!
Sriracha sauce
Soy sauce
Roll the dried tofu cubes around in the flour mix and coat each cube. Fry them in veggie oil/canola oil and set 'em aside.
Sautee mushrooms in butter or oil with some garlic or garlic powder and set those aside as well.
Get the pan/wok hot and oily again (mdhigh at the hottest) and start with the garlic, jalapenos onions/leek, and ginger. Leeks will take longer to soften.
Cabbage and carrots next, they take a bit to soften. 4-5min-ish. Squirt some sriracha on top and a little soy sauce.
Finish with bell peppers for about 3-4 more min.
Add more sriracha and stir it up if you like extra spice!! <--- I use a metric shit-ton ~.^
Mix the mushrooms in.
Mix tofu in gently.
Tastes amazing over rice or noodles!!
Its not super precise but hey, thats how I roll ^^
Frozen coffee, Banana, any kind of chocolate milk that you want. Put them in a blender and you have an awesome smoothie.
