So my team is thinking about getting into the adoptable realm. Do you guys have any suggestions on things like species, traits, things of that sort?

I'm looking for a muscular male polarbear and a herm red panda. Didn't found good ones yet^^
You can try avians, rhinos, hippos, elephants, extinct and hoof types.

As far as adoptables go: don't lower yourself to recoloring line arts and calling it a day. You can ask more for original adopts and people will mostly be also willing to pay those extra bucks as they pay for an char that isn't a copy of just another pre-created line art.
