Awesome Potato, Leek & Bacon Soup Reciepe We Made!

v Journal starts here v First of all, Happy St. Patricks Day and a fine top of the morning to ya! I don't drink so I make a nice Irish meal for St. Patties. Anyway,
~Yuna~ and I made a Potato, Leek & Bacon Soup today that was just like, off the top of our heads making it up as we go along, it was AMAZING! So, here is the recipe if you would like to make it at home.YOU WILL NEED:
- 1L of Vegetable stock
- 8 cups of water
- 1 tbsp of Sesame Oil
- 1 Leek, sliced thinly
- 6 Rashers of Bacon, Diced
- 1kg of potatoes, washed, brushed and cut into large cubes
- 1/2 cup of white vinegar
TO COOK:
- Combine all ingredients, except 4 cups of water, into a large pot and set on high heat.
- Once the pot has come to the boil, put down to a low to medium heat, cover and leave for 1 hour.
- Use a potato masher and mash all potatoes until the potato is well mixed into the soup. (You may chose to use a food processor for a smoother soup)
- Leave on a low heat for another 2 hours before adding the rest of the water.
- Wait for a further hour then serve.
FEEDS 4-5 PEOPLE (or 3 if you're all really hungry, possibly 6 if you don't eat much)
ADDITIONAL OPTIONS:
Add salt and pepper to taste. You may also serve with a splash of cream through the soup. (My mum did this and said it was really nice)
