Sorry bout the delayed update, Ive just finished getting my Culinary Degree and my Business Management Degree. And since they're both A.A.S degrees, i can transfer to a nice state college and get my bachelors. ^_^
As i promised here's some recipes, im giving my mini Key Lime Pie Recipe and my Mini Cheesecakes Recipe. They're both Mini Recipes because im doing recipe research and development for my school so it mostly goes to the faculty and students so i have to keep them minis but the recipe's can just be placed in a bigger setting for you ^_^
Mini Key Lime Pies
Yield: 12
Egg yolks 12
Sweetened Condensed Milk 42 oz
(3 cans)
Key Lime Juice 15 oz
Beat the Egg yolks very lightly in a clean mixing bowl, then stir in the Sweetened Condensed Milk. Add the Lime Juice and beat until smooth. Pour the filling into pre made graham cracker crusts and let set in cooler until firm. Garnish with a dollop of whipped cream or some candied lime zest.
Mini Cheesecakes
Yield: 18
Base Full 1/2
Cream Cheese 2# 8 oz 1# 4 oz
Sugar 14 oz 7 oz
Cornstarch 0.75 oz 0.37 oz
Vanilla 0.25 oz 0.12 oz
Salt 0.25 oz 0.12 oz
Eggs 8 oz 4 oz
Egg Yolks ` 3 oz 1.5 oz
Heavy Cream 4 oz 2 oz
Milk 2 oz 1 oz
Put the cream cheese, sugar, cornstarch, vanilla, and salt in the
mixer and beat until the cream cheese is very smooth. Scrape down
the sides during mixing and then add the eggs and egg yolks one
at a time until incorporated. Scrape the bowl to ensure that the
batter is completely mixed and has no chunks of cream cheese. Add
the Heavy Cream, milk and any flavor additives that you want to
impart on it. Pour into the pre-set crust pans and fill up to near
top. Place in a shallow pan and bake at 250F until set. Cool and
