As far as copyrights and crediting go, does anyone have any knowledge?
I see people using them often as ref sheet BG's and I really like it, but
I don't want to be disrespectful to the photographer by just... taking their work.
Yeah, I would avoid taking random photos without asking permission or confirming they're free to use. It kind of bothers me when someone sites "google" as the source for an image. Some great places to get royalty free creative commons photos that you can use for pretty much anything are http://www.pixabay.com and http://www.morguefile.com
a 3rd more difficult and possibly expensive, but rewarding option is to take your own photos. Although this isn't always an option depending on what you need.

Also BGs that are like, simple shapes cannot be copywritten.
So stuff like checker/stripe/polka dot backgrounds and whatnot are free game.
