Ok...my diabetes messes with my stomach, much to the point that eating beef can be an exercise in gastric distress and sleepless nights since it doesn't want to digest. That doesn't mean that I don't like to experiment! (Insert maniacal laughter here.)
Sicilian Beef Pinwheels.
Your choice steak cut (I have a butcher that offers fairly large cube steaks for such an undertaking)
3 slices Sharp provolone.
3 slices Capicola
Small bag of Pepperoni slices.
1 Clove minced garlic.
Panko breading.
Small can of mushrooms.
Your choice of Italian Spices. (I have a nice Herbs de Province blend, sans Lavender)
Lay your meat out on a clean board and give it a good rub down with the spices.
Toss the mushrooms into a food processor and puree them with a clove of garlic.
Add a layer of provolone, then the Capicola, mushrooms, pepperoni, and another slice of Capicola.
Roll it up and tie it with butcher's twine or a skewer.
Add a slice of provolone to the top.
I broiled mine in a counter top oven, so cooking times will vary based on your preference.

Pureed mushrooms with garlic. Sounds like the mushroom ketchup the Brits used to make, although they pickled them with salt, used black pepper, nutmeg and sometimes vinegar to season them. My cholesterol is bad enough without eating beef, but I do allow myself the occasional misadventure...
Holy shit balls! .. I thought I was just getting old.. for the last few years since becoming a Diabetic, I have liked steak and to a lesser extent, burgers a lot less.. I hate eating steak because digesting it is an all night NO.
