I should open up a hotel with a restaurant that serves guests and the general public. I'd have the best of both worlds; a confined clentel and one that thinks my pancakes are the bees knees.

That's super common, to be honest. My old restaurant did that, my current place does that, and a lot of others do too. Hotels aren't going to limit their pools of restaurant revenue to just a few hundred people at a given time.
